A simple flavor packed tostada that can be cooked in under 30 minutes. High in protein with a lean red meat.
Ahh the Tostada a flat taco.
These things much like an open-faced sandwich can be covered in what ever your heart desires. Eating a tostada is a bodily experience since you run the risk of needing a bath. There is no pretty way to eat these tacos, just go for it barehanded and shove it into your mouth. This meal is not a 1st date or even possibly a 200th date night option, you will look like an animal but that’s okay. We need the protein and fat from the beans, so we don’t care.
16 oz. (1lb.) of Ground Bison
4.5 oz can of chopped green chiles
3-5 Tbsp of Coconut Oil
1.5 tsp of Chili Powder
1 tsp of Paprika
1 tsp of garlic powder
1 tsp of onion powder
1/4 tsp of salt (not a big fan but helps with flavor)
1/4-1 tsp of pepper (to taste or flavor level desired)
1-3 Tbsp. of Red Hot/Sriracha/Tabasco (to taste or heat level desired)
4-6 Corn Tortillas – white or yellow
1 Can of refried beans
1/2 cup of yellow or sweet onion diced finely
1 Jalapeno diced finely
1/4 of homemade or you favorite salsa. Mine happens to be Pace salsa
1/4 cup of shredded Mexican blend or Cheddar-jack blend
Cooking: Time (15-20 minutes)
Place Bison in pan and cook on medium heat.
Add Spices and mix into meat while cooking on medium heat until meat has very little pink left. (optional add: onion)
After meat has browned and little pink remains add in the can of chopped green chiles. (optional add: jalapeno)
Turn heat to low and let mixture sit while you prepare the corn tortillas and refried beans.
Add refried beans to a pan on medium/high heat and cook until warm. (Microwave is an option, use directions on can.)
In another pan add the 3 tbsp. of coconut oil turn to medium heat and let oil get up to temp. Oil should not be burning, and be hot enough to fry the tortilla as soon as its placed in the pan. (Tip: DO NOT PREHEAT THE PAN)
Plating: (5 minutes)
Place 2-3 tortillas on a plate
Cover tortilla in refried beans
Add bison chile mixture and cover with the 1/4 cup of cheese and salsa to desired level.
